Standing over a pan of hot oil in the summer heat may be the last thing you want to do, but these potato chips make it well worth it. They make an incredible side for a backyard BBQ meal, a wonderful picnic accompaniment, and an all-around amazing snack for really any occasion. They're crunchy, spicy, cheesy perfection.
So without further ado, let's heat up the frying pan and get to cooking!
BLACK & BLEU POTATO CHIPS
Makes 4-6 Servings
4 large russet potatoes, peeled & sliced thin with a mandoline or sharp knife
2 cups canola oil
¼ cup Black & Bleu spice rub
Heat the oil in a large pot to 375 degrees F. Using a clip-on candy thermometer will make this easy. Make sure the potato slices are patted dry before adding to the hot oil. Working in small batches, add a handful of potatoes slices to the oil. Fry until they begin to turn brown, flipping or stirring as necessary. Remove to a paper towel-lined baking sheet. Repeat with remaining potatoes.
In a large bowl or a paper bag, add the warm potato chips and Black & Bleu spice rub and stir or shake to coat. Serve immediately or place in a sealed bag for up to 2 days.
